In the fruit salad register, I wanted to present a particularly tasty and delicious version: the pineapple salad with passion fruit. The idea of this dish is simple: you take two exotic fruits, one with rather sweet and sweet flavours and the other with rather acidulous and fresh tones, and you mix them. Three turns of hands later, you get a delicious mix and a perfect harmony of flavours for a dessert all in subtlety.

You’re going to say, “Okay, I’ll just mix pineapple and passion fruit, not complicate your recipe”. But not so fast, there are still 2-3 tricks to know.

The basic idea of the recipe, of course, is to mix our two-star fruits. But not only! It is also necessary to know how to create the small juice that makes the difference, with its small condiments and spices. And this is the subtlety of a good fruit salad: it is not enough to mix the ingredients, you must know how to bring them the extra touch. You want the secret? It’s this way.

1 pineapple
2 fruits of passion
2 green lemons
1 orange
1 vanilla bean
a hint of amber rum
2 c.s.of honey
3 c.c.s.s of water

Optional: some basil or lemon verbena leaves

Preparation of pineapple salad with passion fruit

For this pineapple salad, it will not be a scoop for anyone but the first step is of course to cut your pineapple. So there are several schools: either with a cook’s knife, or with a special utensil, a pineapple cutter, or a personal technique if you have one. The idea is simply to cut them into slices that are not too thick but not too thin either: you must be able to take them and eat them with your fork, but you must not turn them into formless pieces when you serve! Once your pineapple has been cut, pick up all the pieces in a salad bowl, as well as the juice in a saucepan separately.
In the bowl, add the passion fruit pulp to your cut pineapple, mix and set aside.

Then we’ll make the syrup. Take your pineapple juice, add the juice of an orange as well as the honey and rum (to be dosed according to your taste) and finally the grains of a vanilla pod. Add 3 tablespoons of water and heat to simmer. Heat for 1 minute over low heat until the alcohol evaporates and pour this syrup over your pineapple pieces.

All that remains is to mix everything well and let macerate in the cool while the whole cool. Then, once fresh, add the lime zest and lime juice. Then, just adjust the juice. Start by tasting your juice: if it is to your taste, leave it as is. Sometimes there is a need to add some water to complete, it depends if your oranges/lemons were juicy. If it’s too acidic, add some honey, if it’s too sweet, add some lemon juice, or third passion fruit.

If possible, let it macerate a little more before serving. At the last moment, you can add some basil or chopped vervain leaves to give an even more subtle flavour.
